Our honest take
The balloon ride is genuinely one of travel's great mornings, but flights are weather-dependent and cancel often, so build in a buffer day. Stay in a cave hotel in Göreme or Uçhisar, and walk the valleys yourself; the free hikes rival any paid tour.

Where locals eat
Cappadocia's signature dish: meat and vegetables slow-cooked in a sealed clay pot, cracked open at your table. Usually needs ordering a few hours ahead. The pots come from Avanos, the region's pottery town.
